Cherry Oat Energy Bites
1/2 C. Pitted Dates
1/2 C. Almond Butter
3 Tbs. Peanut Butter
3/4 C. Organic Rolled Oats
1/2 C. Roasted Cashews
1/8 C. Raw Walnuts
1 Scoop Protein Powder (I used Pea Protein, but you can use Vanilla too)
4 Quinoa Rice Cakes (Thin Stackers/ Lundberg, these are very thin red rice and quinoa cracker-cakes) just crumble them up with your hands.
1/4 C. Dried Cherries Plus some chopped ones to put on the top for decor.
Throw the dates and nut butter in a processor to get things going, then add in the order of the ingredients. Making sure that all is being blended. It will look a little crumbly. Test out a small amount by rolling some into a ball and see how it is holding. You may want to add some coconut butter or maybe a couple more dates. Spread in a baking pan on parchment paper, press some of the cherries on top and pop in the fridge. After chilling slice up as desired. Enjoy!
